Letter from John Krueger (After CSA and more details on what was in the stock up share)


Hi Everyone, 

I must confess that having written thirty farm updates this season I am not really excited about writing another one! But I wanted to give you the rundown on what you will encounter in your stock up shares. I have already begun to receive phone calls and texts with photos of strange, unknown vegetables. What is it and what the heck do I do with it? I can help with what it is and how it should be stored. As for how to prepare it -that’s what Google is for, n’est-ce pas

The share consists of a box and a bag. The box contains bags with 2 different types of fingerling potato and 3 bags with red skin, gold, and russet potatoes. One bag of onions with some heads of garlic, and a bag of sweet potatoes. Loose in the box is an assortment of winter squash, most of which you will likely already be familiar with. Acorn, butternut, buttercup, delicata, etc. There are two that you may find that you do not recognize. The first is called Autumn Frost and look like a squat butternut with a somewhat frosty or musty skin. It can be used the same as butternut. The second is a new variety called Tetsukabota. It is dark green, ribbed and round and has a very tough skin which makes it an excellent keeper. The flesh is deep orange and has sweet, nutty flavor. Johnny’s seed catalog describes it as “the squash of choice for the apocalypse”; and it could be that it has made a timely arrival (sorry if you are offended by the dark humor). All the items in the box should be stored in a cool dry place

The bag consists of various bags of root vegetables most with 2 types per bag. This may help you identify one item if you know what the other is: Parsnips with rutabaga, daikon with watermelon radish, carrots with beets, radishes with turnips. The only tuber that is not mixed with another is Yacon, a member of the sunflower family native to South America. It is brown and looks like a sweet potato, which is why we put it in the bag and not the box- so you would not confuse it with one. It is juicy and sweet and has a slight orange tint and carroty flavor. The sugar it contains is a fructo-polysaccharide which can not be metabolized and hence is good for dieters and diabetics. It can be cooked but I like it best chopped or grated raw into salads. It oxidizes and turns black quickly after peeling, so prepare it immediately before consumption or spritz it with some lemon juice. If you research it online, you will find that it has a long list of health benefits. It will keep for quite a few weeks in the fridge.

The bag also contains: Brussel‘s sprouts, Napa and green cabbage, spinach, salad turnips with tops and baby rainbow carrots with tops. There are also a few small heads of lettuce and either some fennel or some leeks. All the vegetables in the bag should be stored in the refrigerator in bags. If you are not going to use the turnips or the baby carrots immediately , you should remove and toss the tops(or eat them in the case of the turnips) as they will draw the moisture out of the roots and make them rubbery.

CIRCLE BROOK FARM END OF SEASON “STOCK UP” SHARE

CIRCLE BROOK FARM END OF SEASON “STOCK UP” SHARE
Available for Members & Non-Members

Circle Brook Farm is offering one additional share to be delivered during on November 15 (Millburn) and November 21 (Short Hills).


This “stock up” share includes a variety vegetables that store well so that you will be able to enjoy produce from the farm well into the winter months as well as provide veggies for your Thanksgiving feast.

Details:
  • The total weight of this share is about 60 + lbs. 
  • Approximately a third of the share includes winter squash- butternut, acorn, spaghetti, buttercup (kabocha), delicata, and sweet dumpling squash. 
  • The share also includes an assortment of root vegetables such as carrots, beets, parsnips, turnips, rutabaga, celery root, and radishes.This year the share will include Jerusalem artichokes aka sunchokes and another tuberous member of the sunflower family-yacon (pronounced jacone). It is sweet and juicy with a light orange color (carotene) and is similar to jicama. It can be grated raw into salads or cooked in stir-fries for a water chestnut-like crunch. The root crops will comprise about 15 lbs. of the share. 
  • There will be about 15 lbs. of potatoes, onions, and garlic. The potatoes will be fingerlings and an assortment of other varieties of potatoes. 
  • Share will also include green and red cabbage, and whatever greens we still have in the field at this time, such as arugula, broccoli raab or other mustard greens, kale, lettuce, and spinach. 
  • It is probable that there will be broccoli and/or cauliflower and there will certainly be Brussels sprouts. 
  • The potatoes, onions, and squash can be stored in a cool dry place such as an attached garage or enclosed porch, where they will not freeze. The root vegetables and cabbage will best be stored in your refrigerator. 

The cost of this final share will be $100, which is an excellent value, equivalent to a wholesale price for the produce included.


Farmer John knows that this final share will not work for everyone, but he hopes that many of you will be able to participate. Doing so will help him to make use of the produce that we have in storage, utilize what remains in the fields, and finish the season with enough money in the bank to pay the bills during the winter months.

Farm & Fork Society feels strongly about helping out our community and providing food to those who are less fortunate than our members. During our regular season, we support the campaign Generation Zero: Working to Reduce Hunger in New Jersey a program that provides fresh produce from our farmers directly to local food banks. Sadly our season is ending November 15 and therefore our weekly food donations to homeless shelter Isaiah House, Interfaith Food Pantry of the Oranges and Our Lady of Sorrows Food Pantry will end.

We are currently fundraising to purchase both turkeys and storage produce such as potatoes, squashes, and onions that can last throughout the holiday season for our not-for-profit partners.

As you know our food drives are always two-pronged: (1) Purchase fresh produce for those in need; Essex County has the highest rate of food scarcity in the state with over 114,000 people. (2) Help out our local farmer partners. We want them to finish out the season with enough money in the bank to pay the bills in the winter months.

No donation is too small. Some ideas below. 

$10 = 6 lbs of produce

$25 = 15 pounds of produce

$50 = 22-24 pound turkey

$100 = 60 pounds of produce

This will be a “stock up” share and will include various vegetables that store well, so that you will be able to enjoy produce from the farm well into the winter months as well as provide veggies for your Thanksgiving feast. 

The total weight of this share will be between 50 and 60 lbs. Approximately a third of the share will be an assortment of butternut, acorn, buttercup (kabocha), delicata, and sweet dumpling squash. The share will also include an assortment of root vegetables such as carrots, beets, parsnips, turnips, celery root and radishes. John Krueger expecst that the root crops will comprise about 12 lbs. of the share. He had a great potato harvest this season and an decent onion and winter squash crop as well. There will be about 20 lbs. of potatoes, onions and garlic in the share. The potatoes will include some fingerlings and an assortment of other varieties of potatoes. Also included will be cabbage, and whatever greens we still have in the field at this time, such as arugula, kale, lettuce and spinach. It is possible that there will be broccoli, cauliflower, or Brussels sprouts, but he cannot guarantee their availability at this time. 

The cost of this final share will be $80, which is an excellent value, equivalent to a wholesale price for much of the produce included.

New Offerings: Stock Up Share, Green Mountain Maple Sugar Refinery Company Products, Rolling Hills Farm Garlic Vinegar

Circle Brook Farm (formerly Starbrite Farm) End of the Season "Stock Up” Share 
Circle Brook Farm is offering one additional share to Farm & Fork Society Members that will be delivered on our last delivery date (November 21). This will be a “stock up” share and includes various vegetables that store well, so you can enjoy produce from the farm well into the winter months as well as have great veggies for your Thanksgiving table! 

The total weight of this share is 50-60 lbs. Approximately a third of the share is an assortment of butternut, acorn, buttercup (kabocha), delicata, and sweet dumpling squash. The share also includes an assortment of root vegetables such as carrots, beets, parsnips, turnips, celery root and radishes. The root crops are most likely to comprise about 12 lbs. of the share. 

Circle Brook Farm had a great potato harvest this season and an excellent onion and winter squash crop as well. The share will have about 25 lbs. of potatoes (fingerlings and an assortment of other varieties of potatoes) and onions. Also included will be cabbage, and whatever greens the farm still has in the field at this time, such as arugula or other mustards, and spinach. It is possible that broccoli, cauliflower, or Brussels sprouts will be included, but cannot be guaranteed.  
The cost of this final share is $80, which is an excellent value, equivalent to a wholesale price for much of the produce included.
The potatoes, onions and squash can be stored in a cool dry place such as an attached garage or enclosed porch, where they will not freeze. The root vegetables and cabbage will best be stored in your refrigerator. This final share will not work for everyone, but John Krueger hopes that many of you can participate. Doing so will help him make use of the produce that he has in storage and utilize what remains in the fields. The best part, John will finish the season with enough money in the bank to pay the bills during the winter months!

Rolling Hills Farm Vinegar
Lori Giotti, a Farm & Fork Society member, in-law's own Rolling Hills Farm in Pennsylvania. At the farm they make homemade vinegars in two flavors Garlic and Garlic Honey. We sampled. STARBRITE FARM END OF SEASON “STOCK UP”


Starbrite will be offering one additional share to be delivered on Friday, November 22nd or Friday, November 29th (or maybe Monday, December 2).  This will be a “stock up” share and will include various vegetables that store well, so that you will be able to enjoy produce from the farm well into the winter months. The total weight of this share will be between about 50 lbs.. Approximately a third of the share will be an assortment of butternut, acorn, buttercup (kabocha), delicata, and sweet dumpling squash. The share will also include an assortment of root vegetables such as carrots, beets, parsnips, turnips, celery root and radishes. John expects that the root crops will comprise about 10 lbs. of the share. They had a great potato harvest this season but the onion crop has not kept well.  He has made arrangements to buy some organic onions from a farm in NY State. There will be about 20 lbs. of potatoes and onions in the share. The potatoes will include some fingerling, all blue and all red potatoes. Also included will be cabbage, and whatever greens they still have in the field at this time, such as arugula or other mustards, and spinach. It is possible that there will be broccoli, cauliflower, or Brussels sprouts, but he cannot guarantee their availability at this time. The cost of this final share will be $70, which is an excellent value, equivalent to a wholesale price for the produce included.

Doing so will help him to make use of the produce that he has in storage, as well as utilize what remains in the fields, and will help him with the funds that I need for the pending farm purchase. 
If you are interested in supporting the farm but cannot use so much squash and potatoes, you may want to consider purchasing a stock-up share to be donated to a food bank or soup kitchen. Also if you would like to donate a lesser amount, Starbrite will donate one lb. of potatoes or squash for each dollar donated.

REMINDERS FOR LAST PICK-UP ETC.


(1)  Reminder:  Our last pick up is this Wednesday, November 21st from 11 AM - 2 PM.  Fruit, Pasta and Eggs will again be take your own.

(2) Stock-Up Share:  If you want to purchase a Stock-Up share from Starbrite Farm, email us by Monday.  We currently have enough shares to meet the minimum requirement for John Krueger to deliver. 

(3)  Tapadero Ranch Olive Oil:  For those who ordered Olive Oil, Chai Gray will have it there for you at Wednesday's pick-up.  If you did not order and are interested in purchasing, please email Chai Gray at tapaderoranch at gmail.com.

Starbrite Farm End of Season "Stock Up" Share - $60



Starbrite Farm will be offering one additional share to be delivered during the week of November 25th.  This will be a “stock up” share and will include various vegetables that store well, so that you will be able to enjoy produce from the farm well into the winter months. 
The total weight of this share will be between 35 and 40 lbs. Approximately a third of the share will be an assortment of butternut, acorn, buttercup (kabocha), delicata, and sweet dumpling squash. The share will also include an assortment of root vegetables such as carrots, beets, parsnips, turnips, and radishes. The farmer expects that the root crops will comprise about 10 lbs. of the share. The farm had a great potato harvest this season but the onion crop has not kept well.  John Krueger has made arrangements to buy some organic onions from a farm in NY State. There will be about 15 lbs. of potatoes and onions in the share. Also included will be cabbage, and whatever greens he still has in the field at this time, such as arugula or other mustards, and spinach. It is possible that there will be broccoli, cauliflower, or Brussels sprouts, but he cannot guarantee their availability at this time. The cost of this final share will be $60, which is an excellent value, equivalent to a wholesale price for the produce included.
The potatoes, onions and squash can be stored in a cool dry place such as an attached garage or enclosed porch, where they will not freeze. The root vegetables and cabbage will best be stored in your refrigerator. This final share will not work for everyone, but John hopes that many of you will be able to participate. Doing so will help him to make use of the produce that he has in storage, as well as utilize what remains in the fields, and to finish the season with a small amount of profit.
