White Carrot Salad

Clean and grate 4 White Carrots
Add 1/2 cup Raisins, 1/2 cup Chopped Walnuts, 1 cup Sour Cream, Zest
from 1 Lemon, Juice from 1/2 Lemon (or more to taste). Drizzle honey
on top to taste. Combine and let sit in refrigerator. Tastes better
on days 2 and 3. Enjoy!
