Lemon-Scallion Quinoa

Makes 4 servings

  • 1 cup quinoa
  • ½ teaspoon grated lemon zest
  • 1 tablespoon lemon juice
  • ¼ teaspoon salt
  • 1 tablespoon extra-virgin olive oil
  • ½ cup chopped scallions

  1. Rinse quinoa in fine mesh strainer under cold running water. Drain. Combine quinoa and 2 cups water in pot and bring to boil. Immediately reduce heat, cover and simmer until water is completely absorbed, about 15 minutes. Let stand, covered, 5 minutes.
  2. Whisk together lemon zest, lemon juice, salt and olive oil. Toss with quinoa and scallion. Add salt and pepper, if desired.
