Most of us only eat the garlic bulb, but the garlic plant has more than one edible portion. The stalk or garlic scape of the garlic plant is also edible and very yummy.
So what is garlic scape? The garlic scape serves as the stem or flower stalk from which the seed head of the garlic bulb is formed. They are only formed on hard-neck garlic. As the bulb begins to grow and mature, garlic stalks also begin to lengthen and curve. Farmers harvest the scape or stem so the plant uses more energy to make the bulbs bigger.
